Thierry Laffay produces small amounts of superb, traditional Chablis which directly translates the essence of each vineyard into thrilling and mouthwatering wines of unabashed verve and elegance.
This domaine issues a full range of Chablis, from Petit Chablis and Chablis A.C., through the 1er Crus of Vaillons, Mont de Milieu, Cote de Lechet, and the Grands Crus of Vaudesir and Bougros. Yields are restricted, harvest is by hand, and the vinification and elevage strictly traditional. Wines are raised in both tank and old barrels, SO2 levels are minimal, and bottling is again by hand in small lots. The wines possess a staunch minerality, bright framing acidity, and lively citrus aromas and flavors. Primal and refreshing when young, these have the ability to keep very well for many years (as a recent extended tasting in the cold cellars proved), developing a rich autumnal grace that evolved and lingered in the extended finish. These wines define ”tradition” in the best sense: thoroughly enlightened in their approach to viticulture, detailed in their vinification and elevage, and preserving the unique identity of these fabulous vineyards and this storied region.
