The 2008 Cabernet Franc displays raspberry, cranberry and floral aromas and flavours. It is medium bodied and very approachable with soft tannins and a clean finish.
Grapes for the Cabernet Franc were harvested in late October and early November. The wine was fermented at warm temperatures in contact with the skins for 13 days to extract colour and tannin followed by full malolactic fermentation to soften the wine’s acidity. A portion of this wine received oak ageing to enhance its structure and aromatic complexity while the remainder was aged in stainless steel to preserve its varietal character.
