Distilled on the lees to enhance the original flavors of the eaux-de-vie from which it is produced, CAMUS Ile de Re Double Matured is the result of a unique aging process. It is first matured on Ile de Re in a damp cellar, after which the eaux-de-vie are transported to Cognac and placed in very old barrels which have been toasted specifically to give the cognac structure and a smoky flavor. The combination of these two aging stages creates a sophisticated, original Cognac. Ideal straight, over ice, served with fish or spicy dishes.

Above and beyond its mastery of the distillation process, Maison CAMUS also pays particular attention to the barrels in which its Cognacs are aged. These French oak barrels are toasted to provide a variety of aromas, ranging from a hint of vanilla to roasted coffee. For Ile de Re Double Matured the cellar master uses specific barrels with a higher toast level than the standard to strengthen the Cognacís smoky, masculine nature. These barrels are also known as ’roux’ barrels.

This specific character is down to the vision of Jean-Paul CAMUS, who identified the taste potential of the regionís different terroirs at a very early stage. Guided more by his own intuition than by passing trends, he chose to develop the generally overlooked Cognac cru of Borderies and allow its flavors to shine across the world.
