Dad’s Hat™ Pennsylvania White Rye and Rye Whiskey are crafted using local ingredients and traditional methods. Our mission is to distill and deliver classic Pennsylvania Rye spirits following over 200 years of American distilling tradition. It starts with rye grain grown here in Pennsylvania. We are working with local farmers and suppliers to develop sustainable relationships – tapping into Pennsylvania’s agricultural richness to obtain the highest quality grain for our use while offering fair pricing to farmers in our region. Our recipe uses only rye grain and malt to deliver a pure expression of the taste of classic Pennsylvania Rye Whiskey. Our approach is to make a spirit that, straight from the still, is a great white dog ready to bottle and drink; and will evolve with barrel aging to a delicious rye whiskey – finding the right balance between complexity and smoothness. This white dog, straight from the still, will be our first product – Dad’s Hat™ Pennsylvania White Rye™. Pure, spicy, clean and smooth, just as it should be.
We take some of this same white spirit and age it in charred, white oak Quarter Casks to create our Dad’s Hat™ Pennsylvania Rye Whiskey. These barrels are stored in conditions similar to those employed by rye whiskey makers several generations ago. The best Pennsylvania rye whiskey was aged in a temperature controlled environment. Articles written during the heyday for Pennsylvania Rye describe aging warehouses that were kept at controlled temperatures year round.
The result is a very smooth whiskey that delivers that up front spice that rye is known for, and finishes with a full and round mouth feel. It just tastes great. Dad’s Hat™ Pennsylvania Rye Whiskey is “The Perfect Fit” for sipping or for making delicious cocktails.
